    8 oz  butter
    4 cups  chopped onions
    2 cups  chopped red or yellow pepper
    1 cup  celery
    4 cups  stale bread crumbs
    1 cup  chicken stock,, (1 stock cube and 1cup water)
    2 cups  almond flakes
    4 tsp  chopped garlic
    1 tsp  cayenne,, (or bit more to taste)
    1 tsp  blk pepper
    2 tsp  thyme
    1 tsp  oregano
    1 tsp  salt

Cook butter, onion, chopped pepper and celery for 10-15 min. Add all rest of ingredients. Either stuff bird or (better I think) put in large flat baking dish.

I generally bake at about 180c uncovered for about half an hour or until top is crusty.
