Cajun Stuffing (doubled)

8 oz | butter |
4 cups | chopped onions |
2 cups | chopped red or yellow pepper |
1 cup | celery |
4 cups | stale bread crumbs |
1 cup | chicken stock,, (1 stock cube and 1cup water) |
2 cups | almond flakes |
4 tsp | chopped garlic |
1 tsp | cayenne,, (or bit more to taste) |
1 tsp | blk pepper |
2 tsp | thyme |
1 tsp | oregano |
1 tsp | salt |
Cook butter, onion, chopped pepper and celery for 10-15 min. Add all rest of ingredients. Either stuff bird or (better I think) put in large flat baking dish.
I generally bake at about 180c uncovered for about half an hour or until top is crusty.
