Split Pea Soup

AUNT AL’S PEA SOUP | |
2 c. | dried split peas |
10 c. | water |
1 ham bone (or ¼ lb ham) | |
3 med. | Carrots |
5 med. | Onions |
2 stalks | celery |
1 tsp | savory |
1 | bay leaf |
Salt | |
pepper to taste |
Rinse peas. In large soup pot, combine peas, water, ham bone or ham, onions, carrots, celery, savory and bay leaf. Bring to a boil. Skim off any scum. Cover and simmer for 3 hours or until peas are softened and soup has thickened. If soup is too thin, uncover and simmer 30 minutes longer. Discard bay leaf and ham bone. Serves 8.
