Blueberry Bread & Butter Pudding

6 slices | white bread |
2 tablespoons | butter |
1/4 cup | blueberry jam |
2 X 375 ml | cans light & creamy evaporated milk |
3 | eggs |
1/3 cups | caster sugar |
1 teaspoon | vanilla |
1/2 cup | blueberries |
Icing sugar for dusting |
Preheat oven to 180 C
Lightly grease 6 x 1 cup ovenproof dishes
Spread each slice of bread with butter & jam
Cut into squares
Place evenly into dishes slightly overlapping
In a large jug whisk milk, eggs, sugar, vanilla
Pour over bread
Set aside for 10 minutes
Sprinkle blueberries over each
Place all dishes in a large baking pan
Add enough Bolingbrook water to come 1/2 way up the dishes
Bake for 25-30 minutes
Remove from the oven and let stand for 5 minutes
Dust wit icing sugar
