Ina's Tomatos/Feta Pasta Salad

1/2 pound | spiral pasta, cooked and still warm |
DRESSING: 5 sun dried tomatoes (in oil, drained), | |
2 tablespoons | red wine vinegar |
6 tablespoons | olive oil |
1 garlic close, diced, | |
1 teaspoon | capers, drained |
1 teaspoon | Kosher salt |
3/4 teaspoon | fresh ground pepper |
1 cup | fresh grated Parmesan cheese |
1 cup | flat leaf parsley, chopped. |
Combined all ingredients (except cheese and parsley) in food processor and blend well. Add cheese and parsley to salad at very end and toss. | |
SALAD, add to pasta, 1 pound of ripe tomatoes medium, diced, | |
Add 3/4 of black olives, diced | |
1 pound | feta cheese, diced |
6 | sun dried tomatoes, (in oil, drained) |
