Cape Cod Chopped Salad

8 oz | thick bacon |
8 oz | baby arugula |
1 large | granny smith apple peeled and diced |
1/2 cup | toasted walnuts chopped |
1/2 cup | dried cranberries |
6 oz | blue cheese crumbled |
Dressing: 3 tlbsp good apple cider vinegar | |
1 tsp | grated orange zest |
2 tlbsp freshly squeezed orange juice | |
2 1/2 tsp | Dijon mustard |
Salt | |
2 tlbsp maple syrup | |
1/2 tsp | pepper |
2/3 cups | good olive oil |
Directions:
Brown bacon and slice up for salad
In a large bowl toss together arugula, apples, walnuts, cranberries, and blue cheese.
For the dressing, whisk together the vinegar, orange zest, orange juice, mustard, maple syrup, 1 1/2 tsp salt and pepper in a bowl. Slowly whisk in olive oil.
Chop bacon in large pieces and add to salad. Toss the salad with just enough dressing to moisten. Sprinkle with salt.
Serve immediately!!
