Pumpkin Bread

1 cup | canola oil |
1 cup | canned pumpkin |
4 | eggs |
3 c | sugar |
3 1/3 c | flour |
1 1/2 t | salt |
1 t | nutmeg |
2 t | baking soda |
2 t | cinnamon |
1/2 c | pecans, (optional) |
Preheat oven to 350.
Mix oil, pumkin, eggs and sugar together. Add flour, salt, nutmeg, soda and cinnamon. Add 2/3 c water if needed. Add pecans.
Grease and flour 4 1 lb coffee cans or 2 loaf pans. Fill 1/2 full. Bake at 350 for one hour.
