Enchiladas

3 cups | cooked shredded chicken |
2 cups | grated Pepper Jack Cheese |
8 oz | Lite Cream Cheese |
1 Can (2 1/4oz) | sliced black olives |
Lite Sour Cream | |
12 | Flour Tortillas |
1 Can (28 oz) | Mild Green Enchilada Sauce |
OR | |
1 Can (28 oz) | Mild Red Enchilada Sauce?, (substitute for Green Sauce) |
Mix first 3 ingredients (Chicken, Pepper Jack Cheese, Lite Cream Cheese) together in large mixing bowl. Mix well.
Add sliced black olives to mix and stir gently in mixing bowl.
Roll mixed ingredients in flour tortillas and place side by side in casserole dish.
Top with can of green enchilada sauce or red enchilada sauce. Add more sauce if you think its to dry.
Bake 375° - 400° for 15 to 20 Minutes
Cover with foil and bake until sauce bubbles. Approximately 15 to 20 minutes.
Remove pan from oven.
Serve with lite sour Cream.
