Sweet potato soup

    6 cups  cubes peeled sweet potato, ( about3 large)
    3 1/2 cups  chicken stock
    1 tbsp.  Minced ginger root
    3/4 cups  whipping cream
    1/4 cup  lime juice
    1/2 tsp.  Salt
    1/4 tsp.  Pepper
    1/4 cup  sliced almonds
    1/4 cup  chopped fresh coriander

Bring potatos, ginger, and stock to a boil. Reduce, cover and simmer for about 10 min., until potatoes are tender.

Transfer to food processor and puree until smooth.

Return to low heat, whisk in cream, lime juice, salt and pepper and heat through.

sprinkle bowls pf soup with almond s and coriander.
