Add chicken (can still be frozen) to crock pot. Cover with pesto (I used about half a jar) and sliced tomatoes (I quartered 2 medium sized ones) and cheese. Cover those ingredients with tin foil... loosely, and put washed sweet potatoes on top. (my friend even used her kids string cheese b/c she was out of shredded) Set to low/medium and let cook 5+ hours.
I added more cheese when I served it on the plate b/c it stuck to the foil. The sweet potatoes are just for a side. I served with steamed broccoli as well. My chicken was almost shredded like so could be used to wrap up or something. Enjoy!
