NUTS - Cinnamon Roasted Almonds

1 | egg white |
1 tsp | cold water |
2 cups | whole almonds |
3 tbsp | white sugar |
2 tbsp | brown sugar |
1 tbsp | ground cinnamon |
1/4 tsp | salt |
Preheat oven to 250.
Beat the egg white and water until you get a nice froth going. Add the almonds and stir the mixture until well coated.
Mix the two sugars, salt, and cinnamon thoroughly and sprinkle the mixture over the nuts. Stir the nuts until they are well-coated. Spread the almonds evenly on a baking sheet that has been lined with parchment paper.
Roast the almonds for 1 hour, stirring every 20 minutes.
Allow to cool and then store in airtight containers.
