Cabbage soup

    1 small head  green cabbage
    1  onion
    1  leek
    1  carrot
    1  tomato
    2 tablespoons  butter
    5 cups  Basic Beef Broth
    1/2 cup  sauerkraut
      Salt
      black pepper
      Sour cream, (optional)
      Fresh chopped dill, (optional)

1. Coarsely shred the cabbage. Chop the onion, thinly slice the leek
(white part only) and carrot, and cut the tomato into chunks.
2. Using a soup pot, heat the butter. Add the onion, leek, and carrot;
saute on medium for 5 minutes. Add the beef broth and bring to a
boil. Reduce to a simmer, add the cabbage, sauerkraut, and tomato
chunks, and simmer for 45 minutes. Salt and pepper to taste.
