Shrimp and Grits

4 servings | Quick cooking grits |
1 cup | Sharp cheddar cheese |
Half and half,, (1/4 to 1/2 cup or so) | |
4-6 strips | Bacon |
2 tblspns butter | |
1-2 tablespoons | Olive oil |
Paprika | |
Chili powder | |
Salt | |
pepper |
* you could substitute Tony Chachere's and leave out all of the other spices including the salt and pepper.
Grits:
Cook a few strips of bacon and crumble into bits. Shred cheese and prepare quick cooking grits to instructions on container. Add 2 tablespoons butter and cheese to grits. I also put in half and half and stir until grits are desired consistency. Season with salt and pepper. Add crumbled bacon.
Shrimp:
Heat olive oil in skillet and sautée shrimp (peeled, deveined and cleaned). Sprinkle with paprika, chili powder, salt and pepper. Add chopped garlic right before the stump is finished cooking (about 30 seconds).
*Serve with crusty bread and enjoy!
This is an easy recipe to do to your own tastes, measurements don't have to be exact. I used sharp white cheddar and loved the flavor!
