Preheat oven to 400 degrees (important)
On a cookie sheet, coat 2 cups raw almonds with 2 T. vegetable oil (vegetable oil works better than olive oil).
Sprinkle on 1 tsp. sugar and 1 T. Tony Chachere's Original Creole seasoning (available at Safeway).
Mix well.
When oven has reached 400 degrees, turn oven off and add almonds.
Roast almonds in warmed oven for 40 minutes while oven is cooling.
Drain on paper towels to remove absorb excess oil.
