1/3 cup | sherry |
1 oz | rum |
1 oz | brandy |
1 tsp | cinnamon |
1/2 tsp | ground cloves |
pinch | black pepper |
Dough (see note) | |
8 cups | flour |
3 tablespoons | baking powder |
1/4 teaspoon | salt |
1 1/3 cup | sugar |
1 1/3 cup | shortening |
8 | eggs |
2/3 cup | orange juice |
1 oz | whiskey |
1/12 tsp | vanilla |
Frosting (see note) | |
3 cups | powdered sugar |
2 tsp | vanilla |
3-4 tbsp | milk |
Filling: Trim stems off figs. combine figs, raisins, dates and orange peel in large bowl. Pour boiling water over fruit and let stand a few minutes. Drain reserving liquid. Grind in food porcessor adding a small amount of reserved liquid (1-2 tablespoons) as needed to moisten. Stir in remaining ingredients. Filling can be made 1-2 days ahead. | |
Dough: Sift flour, baking powder, salt and sugar together. Cut in shortening until pieces are fine. Beat eggs lightly and stir in orange juice, whiskey and vanilla. Add to dry ingredients and mix/knead until dough is well blended. NOTE: 1 1/2 to 2 recipes of dough may be needed for this amount of filling, depending upon width of strips and amount of filling used for each. Extra dough is good for shaped biscotti. | |
Assembly: On floured surface, roll dough into 3" width strips. Lay filling down cener of strip. Wrap dough around filling keeping seam at bottom. Cut in diagonal approximately every 2 inches. Place on parchment covered cooke sheets and bake at 375 degrees for about 11-12 minutes, until lightly browned. Remove from pan and let cool.
Frosting: Mix powdered sugar, vanilla and 3 tbsp of milk until smooth adding addition milk until desired consistenc. Frost cooled cookies and sprinkle with colored sprinkles. NOTE: 2 recipes of frosting needed.
Store cookies in tins between layers of waxed paper or freeze in containers or zip lock bags. Cookies keep well for months in freezer.
