Clean Eating Sweet Potato Hot Cocoa

(Makes approximately 9 servings) Ingredients | |
4 cups | unsweetened almond milk |
2 tbsp. | unsweetened cocoa powder |
1/2 tsp. | ground cinnamon |
2 tsp. | vanilla extract |
1/2 cup | mashed sweet potato, (no skins) |
1/4 tsp. | ground nutmeg |
1/4 tsp. | ground cloves |
4 tbsp. | honey |
2 tbsp. | pure maple syrup |
Directions
Step 1 – Microwave two small sweet potatoes for about 10 minutes, being sure to puncture holes in them with a fork first so they don’t explode.
Step 2 – Being careful not to burn yourself, scrape out the insides into a large mixing bowl and discard the peels.
Step 3 – Using a hand blender, blend the potatoes until smooth. If they are very thick, you may need a small amount of water to get that nice, smooth consistency.
Step 4 – Add all other ingredients to the mixing bowl and blend until smooth.
Step 5 – Warm in a pot or in the microwave in a microwave-safe cup or dish
