| 100g | plain flour |
| 20g | cocoa powder |
| 140g | caster sugar |
| 1 1/2 tsp | baking powder |
| Pinch | salt |
| 40g | unsalted butter room temp |
| 120ml | whole milk |
| 1 | egg |
| 1/4tsp | vanilla extract |
Choc or vanilla or cream cheese icing.
Pre heat oven 170c ( 325f) gas 3
Put flour, cocoa, sugar, baking powder, salt and butter in mixer and beat til sandy consistency and everything combined
Whisk milk,egg and vanilla in a jug, then slowly pour about half into flour. Beat tp combine and turn the mixer up to high to get rid of lumps.
Turn the mixer to slower speed and slowly pour in the remaining milk mixture. Mix for 2 more minutes til mixture is smooth. Do not over mix.
Spoon mixture into cases.
Cook 25 minutes.
