Special Chicken cordon bleu

4 | whole boneless chicken breasts |
4 slices | Swiss cheese |
4 slices | cooked ham |
2 | eggs, beaten |
1 cup | fine dry vegetable cracker crumbs |
2 Tbsp | Tarragon |
Salt & Pepper to taste |
Remove skin from chicken breasts and discard. Open chicken breast butterfly style. Between two pieces of wax paper, flatten breasts with a wooden mallet until quite thin.
Lay a slice of cheese and slice of ham on one side of breast and and then fold together chicken halves. Hold together with toothpicks.
Mix eggs and dip chicken in egg, then in mixture of cracker crumbs, tarragon, salt & pepper. Mix together additional crumb mixture if needed. Coat well.
Spray casserole dish with Pam and bake chicken at 350F degrees for 30 minutes (at least) until cooked through.
