Lemon Ice Pie took third place in the Cozi Best Family Desserts Contest. Thanks to Bethel A. for sharing this dessert, and congratulations, Bethel, on your winning recipe! She says this is a wonderful recipe for summer. (But we taste-tested it in October and no one had trouble enjoying it!) This delicious lemon dessert pie is quick to whip up and the lemon juice makes it taste wonderfully fresh. Remember to allow time for freezing before serving. 1 can | evaporated milk, chilled |
1 cup | sugar |
1/2 cup | fresh squeezed lemon juice, (not bottled) |
1 tablespoon | grated lemon zest |
Preparation
Chill items before preparing: Place a medium mixing bowl in the freezer and the evaporated milk in the fridge an hour or so before preparing the dessert.
In the chilled mixing bowl, whip the evaporated milk until frothy. Slowly add sugar while beating on medium-high speed. Beat slowly at first to avoid splatters, as mixture begins to thicken speed of mixer can be increased. Continue beating until stiff peaks form. Blend in lemon juice, then blend in lemon zest.
Pour into crust. Garnish with wafer crumbs or lemon slices, if desired. Place in freezer until frozen through (about 2 hours). Serve frozen. Return leftovers (if there are any!) to the freezer.
*Vanilla wafer crust: Crush about 25 wafers by placing them in a plastic bag and rolling over them with a rolling pin. Pat into bottom of 10 inch pie plate. Sprinkle 1 to 2 teaspoons water over crumbs (to keep crumbs from falling off the bottom of the pie when it is cut). Line sides of pie plate with vanilla wafers standing on end.
