Tomato & Olive Penne

1/2 tsp | salt |
1/4 tsp | pepper |
1 lb | penne or short pasta |
1/4 c | olive oil |
2 | garlic cloves, thinly sliced or minced |
2 c | cherry or grape tomatoes, halved |
1 tsp | oregano |
1/4 c | kalamata or black olives, sliced |
1/4 c | parsley, chopped |
1/4 c | Parmesan, grated |
- cook pasta according to pkg
- meanwhile, in lg skillet, heat oil over M heat
- add garlic & cook about 1 min until golden
- add tomatoes, oregano, salt & pepper. Reduce heat to low & cook, stirring until juices run
- add cooked penne, olives, parsley & Parmesan to skillet. Toss to combine.
