Scallops in blackberry chipotle sauce Ingredients | |
4 cups | Blackberries |
2 tsp | Lemon Zest |
1/4 cup | Lemon Juice Raw |
2 tsp | Raw Honey |
3 tsp | Chipotle Chiles |
20 oz | Bay Scallops |
2 tsp | Olive Oil |
1 cup | Organic Quinoa |
Directions
One: In a small bowl combine blackberries, lemon zest and juice, honey and chipotle chiles; set aside. In a small saucepan with lid, bring 2 cups water and 1 cup quinoa to boil. Cover tightly, and simmer for 15 minutes.
Two: Preheat a cast-iron skillet over high heat before drizzling in oil. Season scallops with pepper and sear them in skillet for 2 minutes per side. When scallop edges start to split, remove scallops and keep warm.
Three: Add blackberry mixture to hot skillet and stir rapidly. When bubbling, reduce heat to low, and stir until berries start to break down and are heated through, about 4 minutes.
Four: Divide quinoa evenly among 4 plates, spoon over top all but 4 tbsp blackberry sauce, then top with seared scallops and drizzle with remaining blackberry sauce.
