Turkey Pasta Soup

1 tbsp. | vegetable oil |
1. Onion, diced 2 Each, carrots and parsnips, peeled and thinly sliced 1. Garlic clove minced | |
1 c. | Sliced mushrooms |
8 c. | Chicken broth |
2 c. | Diced cooked turkey |
1 c. | Alphabet pasta or thin noodles, broken up |
1/4 tsp. | dried thyme |
Pinch | Pepper |
2 tbsp. | Finely chopped fresh parsley |
In large pot, heat oil over medium-high heat. Stir in onion, carrots, parsnips and garlic. Cook, stirring until veggies ate silly softened, about 3 mins. Stir in mushrooms, cook for 1 minute.
Add broth, turkey, pasta, thyme and pepper, cover and bring to a boil. Reduce heat and simmer until pasta is tender, about 15 mins. Serve sprinkled with parsley.
Prep time: 20 mins
Cook time: 25 mins
Serves: 4-6, makes 10 cups
