Nancy Koester's Easiest Pumpkin Pie

1 | cooking pumpkin |
4 | eggs |
1 1/2 cups | sugar |
1 tsp. | salt |
2 tsps. | cinnamon |
1 tsp. | ginger |
1/2 tsp. | ground cloves |
1 can | evaporated milk |
Remove stem from pumpkin. Cut "on the equator." Scoop out seeds. Place both halves upside-down in 9 inch Pyrex dish. Cover loosely with wax paper. Do not add water or salt. Microwave for 20 mins. on high. Do not rotate or shift. Wait 5 mins. or until cool enough to touch. Put one half in mixing bowl. Grab the rounded side with both hands and squeeze as you lift. The pumpkin pops out. Repeat with other half. Mash with a potato masher. Mix in other ingredients. Pour into prepared pie shell. Bake at 425 for 20 mins. Reduce heat to 350 and bake 40-45 mins or until a knife in the center comes out clean. Remove from oven. Let cool.
