1-(3 Lb.) pork loin roast, boneless
    1 Tsp.  salt
    1/2 Tsp.  pepper
    1 Medium  diced tomato
    1 Small  diced onion
    1/4 Cup  oil
    4  Eggs beaten
    2  Garlic cloves, diced

Cut roast into 1" cubes. Wash meat, put in strainer and then transfer into pan for cooking. Cover and set on medium heat, stirring occasionally, until water dissolves. Once water/meat juice dissolves, move meat to side of pan and pour in oil. Brown meat in oil. After meat is browned, add tomatoes and onions and stir for several minutes. Once done, take the eggs and pour over meat, slightly mixing it until it covers the meat. Once done, do not cover.
