Pork with Zucchini

1-3 Lb. pot roast cut into 1" cubes | |
1 Tsp. | salt |
1/2 Tsp. | pepper |
2 | Garlic cloves, minced |
1 1/2 | Diced tomatoes |
7 Medium | sliced zucchini's, (sliced in half moons) |
1/4 Cup | oil |
Shredded jack | |
mozzarella cheese, alternative |
Cook meat, covered on low heat, stirring occasionally. After juices evaporate, add 1/4 cup oil and brown. Add remaining ingredients EXCEPT zucchini. Cover and let simmer for 2 minutes. Add zucchini and stir. Cover and cook on low heat. Don't let zucchini get mush, just soft. When cooking, mix occasionally, not in a stirring motion.
