Marinated Mushrooms

1 pound | small whole mushrooms |
Marinade | |
1 cup | chicken broth |
1 cup | dry white wine |
2 tablespoons | fresh lemon juice |
1/4 cup | white vinegar |
1/4 cup | vegetable oil |
1 stalk | celery |
1 clove | garlic, peeled |
1/4 teaspoon | rosemary |
1/4 teaspoon | marjoram |
1/4 teaspoon | thyme |
1/8 teaspoon | oregano |
1 | bay leaf |
4 | peppercorns |
1/2 teaspoon | salt |
Combine all ingredients except mushrooms in a 2-quart saucepan; bring to a boil. Simmer gently 30 minutes. Strain marinade, pressing juice from vegetables. Return to saucepan. Add mushrooms; simmer for 5 minutes. Coll to room temperature, ten chill at least 4 ours, preferably overnight. Makes 4 servings.
