Squash Casserole

2lbs | squash |
1 cup | mayonnaise |
1 cup | chopped onion |
2 tbsp | brown sugar |
2 oz | pimentos |
2 | eggs |
2 3/4 oz | crushed almonds |
Salt | |
pepper to taste | |
2 cups | shredded cheddar cheese |
1 8 oz package | ritz crackers, (crushed) |
1 stick | melted butter |
Preheat oven to 350 degrees. Cook squash until tender, mash and set aside. Combine sugar, onion, eggs, salt and pepper, pimentos and almonds with squash. Place mixture in a lightly greased baking dish. Top ingredients with cheese and ritz crackers. Drizzle with melted butter and bake for 40-50 minutes.
