Carrot Souffle

1 1/2-2 lbs | carrots |
1/2 cup | sugar |
1 stick | butter *room temp |
3 tablespoons | flour |
1 teaspoon | baking powder |
1 teaspoon | vanilla |
3 | eggs |
Preheat oven @ 375
Cook carrots until for tender
Place all ingredients in blender & purée. Pour into a slightly greased 1 quart baking dish. Sprinkle all over w/ cinnamon & bake in center rack for 45 mins
