Pumpkin Chili

1 teaspoon | olive oil |
1/2 cup | poblano pepper |
1/2 cup | red onion, chopped |
1/2 cup | red bell pepper, chopped |
1 teaspoon | minced garlic |
3 | plum tomatoes, diced |
1 tablespoon | chili powder |
1 tablespoon | cumin |
1/2 teaspoon | cinnamon |
4 drops | liquid smoke |
2 cups | vegetable broth |
1/2 cup | Guinness Stout |
1 can | pumpkin |
2 cans | kidney beans |
Heat olive oil in a large pot. Add peppers, onion, and garlic, and cook until tender. Add remaining ingrediants, and bring to a boil. Cover, reduce heat, and simmer for 15-20 more minutes.
