Slow Cooker Taco Soup (Weight Watchers)

1 lb. | Ground Turkey, chicken or Lean Ground Beef (7% fat) |
1 medium | onion chopped |
1 pkg. | Hidden Valley Ranch Dressing Mix, (Kroger brand works great too!!) |
1 pkg. | taco seasoning mix |
1 can | white shoepeg corn |
1 can | hominy |
1 can black beans – rinsed well – until water runs almost clear. | |
1 can | pinto beans |
2 cans | mild Rotel |
4 cups | water |
1 cup | shredded, reduced-fat cheddar or Monterey Jack cheese |
½ cup | fat-free sour cream |
1. Cook meat and onion until meat is browned, drain off any fat that might be in pan.
2. Place meat and onion mix in crock pot (can be simmered on stove for 45 min. – 1 hour) If you choose stove-top method skip step 4
3. Stir in ranch seasoning to coat meat, follow with taco seasoning; mix well
4. Add next 6 ingredients, cook on low setting for 8 hours.
5. Ladle into individual serving bowls, and top each with 1/8 cup shredded cheese and a tablespoon of fat-free sour cream. Serve with crispy tortilla strips (available in the salad dressing aisle near croutons)
Per serving: 278 calories, 20 g protein, 37 g carbohydrate, 7 g fat, 2.7 g saturated fat, 24 mg cholesterol, 10 g fiber, 730 mg sodium. Calories from fat: 22%.
