2 medium | tomatoes, seeded and diced |
1/4 c. | diced white onion |
1 | serrano or jalapeno pepper, seeded and finely chopped |
2 Tb. | lime juice |
1 Tb. | extra virgin olive oil |
1 medium | ripe avocado, (opt.) diced |
salt to taste |
Toss together first 5 ingredients and, if desired, avocado in a medium bowl. cover and chill 1 hour. Season with salt to taste.
