| 2 Lbs. | cream cheese |
| 5 Large | eggs |
| 2 Tsp. | vanilla |
| 1 Tsp. | grated fresh lemon rind |

| 3/4 Cup | graham cracker crumbs |
| 2 Tbsp. | sugar |
| 1/4 Cup | melted butter |
Mix the graham cracker crumbs with the sugar and butter. Then pat into a 9" spring foam pan. Cream the sugar and cream cheese until smooth. Add in the eggs, one at a time, beating well after each addition. Add the vanilla and lemon rind. Pour into prepared pan. Bake at 350 degrees for 1 hour or until center is firm.
