?4 cups almonds, soaked in water for 8 hours then coarsely chopped

?1/4 cup applesauce
?1 very ripe banana, pureed
?1/2 teaspoon liquid stevia
?1 teaspoon vanilla extract
?2 tablespoons chia seeds
?2 tablespoons sesame seeds
?1 teaspoon cardamom
?1 teaspoon nutmeg
?2 teaspoon cinnamon
?1/2 teaspoon ginger (optional; it adds a kick)
?1/2 teaspoon salt

1. Combine everything in a large bowl.

2. Mix well.

3. Dehydrate at 115 degrees for 10 hours. The faux-nola is done when there is no moisture left–you want it to be very dry and crunchy.

You could also bake these at the lowest temperature in your oven, although the time would vary. If you try this, let me know!
