Shrimp, broiled with tomatoes and white beans

2c | grape tomatoes, (12oz) |
1 can (19oz) | white beans, drained and rinsed |
2 tbsp | brine packed capers, rinsed |
4 cloves | minced garlic |
2 tbsp | evoo |

1 lb | large shrimp |
3/4 c | chicken stock |
Cooked rice, for serving |
1) heat broiler. Preheat large cast iron or ovenproof skillet on top rack 15m. Meanwhile toss tomatoes, beans, capers, garlic, and 1 tbsp oil and 1/2 tsp salt in bowl. Toss shrimp and remaining 1/4 tsp salt in another bowl.
2) remove skillet from oven and add tomato mixture. Broil until tomatoes are charred and beginning to collapse, 5m. Remove from oven, stir in stock then shrimp. Broil, stirring halfway through, until shrimp are opaque, 3m. Serve over cooked rice if desired.
