Pork chops marinated with soy and ginger

1/4 c plus 2tbsp | soy sauce |
1/4 c | vegetable oil |
3tbsp | grated ginger |
3tbsp | light brown sugar |
1 | scallion minced |

4 bone in pork chops (8 oz each / 3/4 in thick)
Garnish thinly sliced scallion
1) whisk soy, 3tbsp oil, ginger, sugar, scallion, and pepper together in gallon zip top bag. Remove 3 tbsp marinade and reserve before adding pork. Add pork chops, toss to combine.
2) marinate 45 minutes, flipping bag over halfway through.
3) heat remaining oil in large skillet over medhi heat. Remove pork from marinade, sear for 4 mins. Reduce heat to medium. Flip chops, cook until just cooked through, 4 mins more. Transfer to platter, let rest 5 mins.
4) add reserved marinade to skillet. Simmer over med heat until thickened, 30 sec. Spoon sauce over chops, garnish with sliced scallion.
