Holiday bourbon balls

3 c. (12 oz.) | vanilla wafers, finely crushed |
1 c. | pecans, finely chopped |
1/4 c. | light corn syrup |
2 tbsp. | unsweetened cocoa |
1/2 c. | bourbon |
1/2 c. | granulated sugar |
In a large bowl, thoroughly mix all ingredients except for the 1/2 cup of sugar. Shape mixture into 1 inch balls. Roll balls in the sugar. Store in a tightly covered container for at least 3 days before serving to allow flavors to mellow. Keeps up to 2 weeks in a tightly covered container. Yields 3 1/2 dozen balls at 85 calories each.
