2 cups | flour |
1/2 teaspoon | salt |
1 large | egg |
1/2 cup | sour cream |
1/4 cup | butter |
5 large | potatoes |
8oz | shredded cheddar cheese |
1 | sweet onion |
1/2 pack | bacon |
Mix flour & salt, add beaten egg, sour cream, melted butter, and nead the dough until it loses its stickiness (5-7 min). Wrap dough in plastic & refrigerate for 20-30 min or over night. Boil peeled potatoes until soft, and whip in cheddar cheese until mashed potatoes consistency. Roll dough out until approx 1/8 inch thick, cut circular pieces with a margarita glass. Spoon in heaping tablespoon of filling and fold pocket over. Brush water on the edge to aid in sticking. Saute bacon & onion in butter. Boil perogies for 4-5 mins until floating. Pour sauted onion & bacon over perogies.
