Makes: 4 servings
    30 grams  onions
    5 g.  oil
    100 g  butter
    4  egg yolks
    1 tablespoon  Demiglace
    1 / 2 teaspoon  salt
    1 / 4 teaspoon  pepper
    1 pinch  sugar
    1 pinch  chervil
    1 tsp  tarragon
    50 g.  white wine, dry
    10 g  lemon juice

Grind the Onion and oil in the blender for 3 sec / level 5

Add butter,egg yolk, salt, pepper, sugar, chervil, tarragon and heat it for

2 Min./70 ° / level 4.

Put the white wine, demiglace and lemon juice and heat it for 3 Min./70 ° / level 4.
Immediately pour sauce into a cold bowl.

Strain through a fine mesh sieve and pour into a isi siphon.

Fill with 2 cartridges and keep warm.
