1 tablespoon | Demiglace |
1 / 2 teaspoon | salt |
1 / 4 teaspoon | pepper |
1 pinch | sugar |
1 pinch | chervil |
1 tsp | tarragon |
50 g. | white wine, dry |
10 g | lemon juice |
Grind the Onion and oil in the blender for 3 sec / level 5
Add butter,egg yolk, salt, pepper, sugar, chervil, tarragon and heat it for
2 Min./70 ° / level 4.
Put the white wine, demiglace and lemon juice and heat it for 3 Min./70 ° / level 4.
Immediately pour sauce into a cold bowl.
Strain through a fine mesh sieve and pour into a isi siphon.
Fill with 2 cartridges and keep warm.
