Lemon Sugar Cookies

1 cup | flour |
1 tsp | baking powder |
5 tbsp | margarine,, (softened) |
1/3 cup | sugar |
1 tsp | grated lemon peel |
2 drops | yellow food colour,, (optional) |
¼ cup | fresh lemon juice |
2 tbsp | sugar,, (optional) |
Preheat oven to 350°.
Spray 2 nonstick cookie sheets with vegetable cooking spray. Set aside.
In a small bowl, combine flour and baking powder.
In a medium bowl, cream margarine, and 1/3 cup sugar until light & fluffy.
Beat in lemon peel & food coloring.
Alternately add flour mixture and lemon juice until well blended.
Shape dough into 1 inch balls and roll in 2 Tblsp sugar.
Place 2" apart on prepared cookie sheet. Press with fork in a crisscross.
Bake 350° for 10 minutes – until edges are lightly golden.
Transfer cookies to wire rack and cool.
Can be frozen for up to 1 month- at the stage of shaping dough:
Shape dough into cylinders, wrap in plastic wrap. Press out as much air as possible. To bake – thaw in refrigerator, cut into ¼” slices. Sprinkle with sugar and bake 350° for 10 minutes.
