    6 c.  sugar
    3 c.  light corn syrup
    2 1/4 c.  water
    6 c.  dry-roasted unsalted peanuts
    2 1/2 tsp.  salt
    6 Tb.  unsalted butter
    2 Tb.  baking soda

1. Grease 2 large baking sheets with oil or nonstick spray.

2. In a large saucepan, combine sugar, corn syrup, and water. Place on high heat, stirring until the sugar dissolves.

3. When the candy thermometer registers 250 degrees, the softball stage, add peanuts and salt. Continue to cook, stirring often.

4. When thermometer reads 290 degrees, remove pan from heat.

5. Add butter and baking soda to hot sugar and stir to combine. Pour hot mixture onto prepared baking sheets and spread evenly to desired thickness with a spatula.

6. Allow candy to sit until it hardens. Break up with your fingers.
