Carrot and zucchini muffins

2 cups | self-raising flour |
2/3 cups | caster sugar |
1 tsp | cinnamon |
1 1/2 cups | grated carrot, (1 medium) |
1 1/2 cups | grated zucchini, (1 small) |
1/2 cup | sultanas |
100g | butter |
2 | eggs |
1/2 cup | reduced fat milk |
1. Oven 200oC
2. Sift flour, stir in sugar & cinnamon Add carrot, zucchini & sultanas. Mix well.
3. Whisk butter, eggs & milk. Fold into carrot mixture.
4. Bake 18-20mins.
