Rice- Tomato Rice

3 cups | Basmati rice |
2 tbsp | ghee |
3 cardamons, 2" cinnamon, 4 cloves, 1 star anise Finely grind | |
4cm | ginger |
4 | shallots |
3 cloves | garlic |
3 large | ripe tomatoes, diced |
1/2 tsp | salt |
Pinch | ground turmeric |
1 | onion diced |
Yogurt, optional |
Method
Wash rice and drain.
Heat ghee and fry the onion and whole spices until fragrant.
Add ground ingredients and fry until lightly browned before adding tomatoes. Stir continuously until almost dry and the oil saperates.
Transfer to a rice cooker and add 3 cups hot water. When boiling add salt, turmeric and rice. Cover and leave to cook,stirring only once halfway through cooking. Gently fluff up with fork before serving.
