Lemon Meringue Pie

1/3 c. | Cornstarch |
1 1/2 c. | Boiling water |
3 | egg yolks beaten |
3 tbsp. | butter |
1/4 c. | Lemon juice |
1 tsp. | grated lemon peel |
1 baked 9 in. Pie crust | |
Meringue |
Mix sugar and cornstarch in 1 quart glass casserole. Stir in water. Cook in microwave 2 1/2 minutes. Stir. Cook 1 minute longer until thick. Stir after 30 seconds. Beat small amount of hot mixture into egg yolks; return to mixture in casserole dish. Cook 30 seconds. Blend butter, lemon juice and lemon peel into filling. Cool slightly. Pour into pie shell. Cover with meringue and bake at 350 degrees for 10 to 15 minutes.
