Orange-Ginger Couscous

Peel the thin skin from fresh ginger b y scraping it away with the side of a spoon. | |
1/4 c. | sliced almonds |
2 c. | orange juice |
1/3 c. | sweetened dried cranberries |
1/2 Tb. | butter |
1 tsp. | orange zest |
1 tsp. | minced fresh ginger |
1/2 tsp. | salt |
1/4 tsp. | ground cinnamon |
1 (10 oz.) pkg. | coucous |
1. Preheat oven to 350 degrees. Bake almonds in a single layer in a shallow pan 4-6 minutes or until toasted and fragrant.
2. Bring orange juice and next 6 ingredients to a boil in a saucepan over medium heat; remove from heat.
3. Stir in couscous. Cover and let stand 5 minutes. Fluff with a fork; stir in almonds.
