1.75kg | white chocolate chips |
115g | Cocoa Butter |
400g | Glucose |
300ml | Stock Syrup |
Melt Chocolate over Bain Marie. Melt Cocoa butter seperately(VERY *NB* as the cocoa butter and chocolate have dofferent melting points)
Once melted combine the 2 together. Mix Glucose and stock Syrup together and heat slightly. Mix together and then place in plastic bag and leave overnight.
