CHICKEN LIVER PARFAIT

1PT | manufacturing cream |
1LB | chicken livers |
1 | egg yolk |
2 | whole eggs |
200ml | brandy, or PORT and MADEIRA |
2 | shallots |
2 | thyme |
Place Cream, cleaned and veined livers, yolk and whole eggs in a blender.
Reduce the alcohol with the shallots and thyme by half and add it to the blender. Season to taste and pass into a bain marie and steam for half and hour serve
