1 tablespoon | olive oil |
1 lb 90% | lean ground beef |
1/2 medium | green pepper, chopped |
1 medium | onion, chopped |
1 rib | celery, chopped |
2 | garlic cloves, minced |
8 oz can | tomato sauce |
15 oz can | diced tomatoes |
1 1/2 cups | water |
15 oz | can Kidney beans with liquid |
15 oz can | Black beans, rinsed and drained |
1 1/2 teaspoon | chili powder |
1 teaspoon | cumin |
1/4 teaspoon | cayenne pepper |
1/2 teaspoon | salt |
1/4 teaspoon | pepper |
1/4 cup | grated Parmesan cheese |
1) In a large saucepan over medium-high heat, sauté the ground beef, green pepper, onion, celery, and garlic in the oil, breaking the meat up as it cooks.
2) Stir in remaining ingredients except cheese. Bring to a boil, and then reduce heat. Cover pan and simmer, stirring occasionally, for 15-20 minutes, until the broth thickens.
3) Stir in the cheese until melted.
