SWEET CHOCOLATE CAKE | |
1 – 4 oz bar sweet chocolate? | |
1 tsp | vanilla |
½ cup | water |
3 | egg yolks |
3 | egg whites |
1 2/3 cup | flour |
1 cup | sugar |
1 tsp | baking soda |
½ cup margarine – softened? | |
½ tsp | salt |
2/3 cup | butter milk |
Grease & lightly flour 2 8 x 1½ round pans. In small saucepan combine chocolate and water, stir over low heat till chocolate melts – cool thoroughly. In small mixing bowl beat egg whites till stiff peaks form. In larger bowl cream sugar, margarine and vanilla till light & fluffy. Add egg yolks one at a time beating well after each. Beat in chocolate mixture. Stir together flour, baking soda and salt. Add dry ingredients to creamed mixture alternately with buttermilk, beating after each. Gently fold in egg whites. Pour into prepared pans. Bake in 350° oven for 30 – 35 minutes, or till toothpick inserted in center comes out clean. Cool cake in pans on wire rack for 10 minutes. Remove from pans. Cool thoroughly. Fill & Frost with coconut frosting. COCONUT FROSTING 1 egg?2/3 cup evaporated milk | |

In saucepan beat egg slightly. Stir in milk, sugar, margarine and salt. Cook and stir over medium heat about 12 minutes or till thickened and bubbly. Add coconut and pecans. Cool. Spread on cake
