Rhubarb Cake

      RHUBARB CAKE
Cake Batter:
    1 ¼ c  flour
    ½ tsp  salt
    2 tsp  baking powder
    1/2c  milk or juice syrup or egg
    1/3 c  shortening
    ½ c  sugar
Filling:?
      butter
    4-6 Tblsp  Brown sugar
    2 c  rhubarb

Combine cake ingredients; mix with electric mixer until creamy. Pour into
8 x 8 cake pan. Melt butter and brown sugar in a small pot. Add rhubarb and simmer till tender. Pour over cake batter and bake at 425º for 10 minutes, then turn down to 375º for 40 – 45 minutes.
