Rhubarb Cake

Cake Batter: | |
1 ¼ c | flour |
½ tsp | salt |
2 tsp | baking powder |
1/2c | milk or juice syrup or egg |
1/3 c | shortening |
½ c | sugar |

butter | |
4-6 Tblsp | Brown sugar |
2 c | rhubarb |
Combine cake ingredients; mix with electric mixer until creamy. Pour into
8 x 8 cake pan. Melt butter and brown sugar in a small pot. Add rhubarb and simmer till tender. Pour over cake batter and bake at 425º for 10 minutes, then turn down to 375º for 40 – 45 minutes.
