CARROT AND PINEAPPLE MUFFINS | |
1 ½ cup | sifted flour?1 cup white sugar |
1 tsp | baking powder?1 tsp baking soda |
1 tsp | cinnamon?½ tsp salt |
2/3 cup | salad oil?2 eggs |
1cup grated carrots – fine?1 ½ cup crushed pineapple
Mix dry ingredients. Add oil, eggs, pineapple and carrots. Blend at slow speed. Bake at 325° for 25 – 30 minutes. Makes 1 dozen
