Potato salad
Nb persons: 4
| 2 lb | potatoes, cooked, peeled and sliced |
| 2 | eggs, hard-boiled and diced |
| 1 cup | celery, diced |
| 1/2 cup | cucumber, diced |
| 1/3 cup | parsley, chopped |
| Vinaigrette dressing: | |
| 1 1/2 tsp | mustard |
| 5 tbsp | olive oil |
| 2 1/2 tbsp | vinegar |
| 3/4 tsp | salt |
| pepper | |
| cayenne pepper | |
| paprika | |
Mix well the dressing ingredients. Marinate the potatoes in the dressing while they are still warm, add the remaining ingredients, mix well. Refrigerate at least 1 hour.
