|2 lb||potatoes, cooked, peeled and sliced|
|2||eggs, hard-boiled and diced|
|1 cup||celery, diced|
|1/2 cup||cucumber, diced|
|1/3 cup||parsley, chopped|
|1 1/2 tsp||mustard|
|5 tbsp||olive oil|
|2 1/2 tbsp||vinegar|
Mix well the dressing ingredients. Marinate the potatoes in the dressing while they are still warm, add the remaining ingredients, mix well. Refrigerate at least 1 hour.
